This is the best way I've found to eat Steel Cut Oats. It the perfect balance of creamy and chewy. It's very filling and very tasty. NOTE: the picture isn't mine, I grabbed it off the web. My apologies. I'll get my own pictures as soon as I can.

Ingredients For actually edible steel cut oats (154 cals/1 cup)

  • 3 c
    water
  • 1/2 tsp
    salt
  • 1 c
    steel cut oats
  • 1 c
    unsweetened/no sugar added apple juice
  • 1
    fuji apple, or other sweet apple
  • 1/4 - 1/3 c
    raisins
  • 1 tsp
    cinnamon
  • 1 Tbsp
    chopped pecans or nuts of your choice
  • OPTIONAL
  • 1
    ripe banana or other fruit of your choice
  • OPTIONAL SWEETENERS - USE ONE OF THESE IF YOU WANT MORE SWEETNESS
  • 2 Tbsp
    xylitol or other sweetener of your choice
  • 2 Tbsp
    white sugar
  • 2 Tbsp
    brown sugar

How To Make actually edible steel cut oats (154 cals/1 cup)

    In a medium sauce pan, mix 3 cups water and 1/2 tsp salt. Bring to rolling boil on high heat and add 1 cup Steel Cut Oats. Stir to mix. Bring back to boil and cook for 6 minutes stirring occasionally. Pay attention to pot so that it doesn't boil over. You may need to reduce the heat to medium.

    After boiling for 6 minutes, remove from heat, cover and let sit on the stove overnight.

    In the morning, peel and core apple. Cut into 8ths and cut into 1/8th inch slices or shred in the food processor. I use the food processor. It's faster and easier than slicing. Shred coarse or fine, whichever you prefer. I've done both and like it either way.

    Uncover oats and stir. Add 1 cup apple juice, apple and 1/4 - 1/3 cups raisins. Mix and bring to rolling boil on high heat. Stir in 1 tsp cinnamon, reduce to medium and boil for 6 minutes.

    Serve in a bowl garnished with 1 Tbs chopped nuts. We use pecans. Served as is, this is about 154 calories for 1/4 of the pot. My mother likes to add a banana to hers. It's very good.

    SUBSTITUTION...1/2 cup milk for 1/2 cup apple juice makes this very creamy. You can also make this a savory dish by substituting the water, apple juice, apple, raisins and cinnamon with chicken or beef broth, cheese, herbs and spices of your choice, vegetables and shredded chicken or beef.

    This stores well in the fridge and heats well in the microwave. Make a big pot and eat it everyday. It's tasty and good for you.
