Ingredients

    onions, chopped
  • 2 Tbsp
    olive oil
  • 1 lb
    ground beef, extra lean
  • 1 tsp
    seasoning salt
  • 1 c
    chopped spinach, squeezed dry
  • 6
    eggs
  • 1/4 c
    asiago cheese, grated
  • 1/4 c
    parmesan cheese, grated

How to Make Joe's Special

Step-by-Step

  1. Saute onions in olive oil over medium high heat.
  2. Add ground round and season with salt. Cook until medium well. Break up with fork.
  3. Add spinach and eggs, and stir and cook until done, but not dry.
  4. Serve on individual plates. Sprinkle with combined cheeses.
