I hope you enjoy my Honey Bunches of Nuts dry breakfast cereal. This is a natural high protein cereal with great taste and chock full of good things to eat. I have made it dozens of times because I wanted to get the flavor just right. This version is my favorite. I hope you enjoy it, too!

Ingredients For bonnie's honey bunches of nuts - gluten free

    tablespoons honey
  • 2
    teaspoons stevia
  • 2/3
    cup crushed nuts--break pecans in half, use almond slices, macadamia nuts or walnuts
  • 1/4
    cup chopped raisins
  • 1/2
    cup almond flour
  • 1/2
    cup protein whey powder
  • 4
    tablespoons coconut oil
  • 2
    teaspoons strawberry extract
  • 1
    tablespoon water

How To Make bonnie's honey bunches of nuts - gluten free

    Preheat oven to 300 degrees. In a small mixing bowl, combine honey with the Stevia, nuts, and raisins.

    Add the almond flour, protein whey powder, and strawberry extract.

    Add oil and one tablespoon of water and stir to make a dough.

    Spoon the dough onto the parchment paper on a cookie sheet leaving some space between each drop. It will run together when baked.

    It will look like this on the parchment paper.

    Bake about 15 minutes until golden brown. Watch it carefully so it doesn't overbrown.

    When it is brown, it will still be soft. Remove the pan from the oven and drag the parchment paper with the cereal onto a large cutting board.

    Gently stir with a large spatula, breaking the cereal into large pieces. Let it cool throughly and it will become nice and crisp.

    Place the cooled Honey Bunches of Nuts into air-tight containers.

    Store the cereal in the refrigerator.
