aga' and månhå pancakes (

A Sunday morning favorite in my house. If Aga' is not in season, you can just use månha (it's still good!). I use "Aunt Jemima's Original Pancake Mix." It calls for 2 cups of mix and 1 1/2 cups water. I replace the water with månhå juice. If you're using another brand of pancake mix, you can do the same to have it work out.

Ingredients For aga' and månhå pancakes (

  • non stick cooking spray
  • 2 - 3 lg
    månhå (young coconuts). you will need the juice and the meat.
  • 2 c
    pancake mix
  • 3 sm
    aga (bananas - the small plantain bananas are better!)

How To Make aga' and månhå pancakes (

    Open 2 or 3 young coconuts. Have a pitcher set aside, so you can pour the juice in. *We always open way more than we need, so we can drink the juice and snack on it later.

    Spoon månhå out into a separate bowl [It should be soft. If it's too hard, you can just peel it in to very thin slivers using a regular peeler. It will still work out] Use as much or as little as you want, depending on how you like your pancakes. *In the picture, some of the ones we ended up with weren't månha and had already turned into coconut meat, but we used it anyway.

    Slice bananas and mash lightly. The mixture shouldn't be smashed until it's smooth (unless you like it that way, I guess?)

    Add shredded månhå (or coconut meat if that's what you ended up with) and bananas to 2 cups of pancake mix. Instead of water (as called for on the pancake mix's directions), substitute månhå juice. If you're using the original Aunt Jemima mix, you will need 1 1/2 cups of månhå juice.

    Mix together lightly, making sure there are no more lumps of batter. The only lumps should be the bananas or månha pieces.

    Heat griddle of skillet on medium. Once heated, spray lightly with non-stick cooking spray. Drop about 1/4 cup of batter (less or more, depending on how big you want your pancakes to be) on skillet. When one side of pancake is lightly browned, flip and cook the other side. (Just like you would with any other pancake mix). :)
