Another recipe that I have used for years and years. Makes a hearty breakfast, or a good "breakfast-for-supper" meal, along with hot biscuits and maybe even some gravy!

Ingredients For wagon wheel omelet

  • 1 pkg
    brown'n'serve sausage links (pk of 10)
  • 1 pkg
    simply potatoes hash browns
  • 1/3 c
    onion, diced
  • 1/3 c
    green bell pepper, diced
  • salt and pepper, to taste
  • 2
    eggs, beaten
  • 3/4 c
    cheddar cheese, shredded

How To Make wagon wheel omelet

  • 1
    Brown sausage links in a 12" non-stick skillet, according to directions. Remove to paper towel.

    Combine hash browns, onion and bell pepper. Press into same skillet that you used to brown sausage links. Sprinkle potatoes with salt and pepper, cover, and let cook over medium-low heat for 10-15 minutes, or until bottom of hash browns is a light brown.

    Meanwhile, beat two eggs. Pour over potatoes at the end of the 10 minutes, tilting skillet to coat top of potatoes. Add sausage links, in a spoke design, around the skillet. Cover, and let cook an additional 5 minutes, or until eggs are set. Turn off heat, sprinkle with cheese and cover until cheese is melted.
