This came from a Sunday morning, desperately seeking something to eat in a bare refrigerator. The goat cheese sounds weird, but it brings such a light fresh taste to the concoction. It's quick and easy, and is a crowd pleaser, at least for those seeking something interesting for breakfast. On a personal opinion, I do recommend a thick herb Italian bread.

    whole egg
  • 1 c
    favorite marinara (prego is my favorite)
  • 2 slice
    seasoned italian bread
  • 1 Tbsp
    oregano, fresh
  • 1 Tbsp
    goat cheese
  • 2 Tbsp
    parmesan cheese

How To Make sunday morning eggs marinara

    Crack all the eggs spaced in a hot pan and let cook to completion. While cooking, lightly salt and pepper to taste, then add oregano. Fold over, omelet style. Top with marinara (spread over the entire egg, then sprinkle with the goat cheese and grated Parmesan cheese. On low heat, let the cheese and the sauce get warm.

    While the eggs are cooking, toast the bread in a toaster or for thicker bread, toast in the oven. Since this serves two, cut the egg mixture in half. Place 1 piece of toast on 2 plates then top with the egg marinara. Serve immediately.
