I wanted to clean out the fridge and use up some potatoes this morning..this was said make it anytime ...LOL!..who can resist fried taters, ham and bacon?

  • 2 - 3 medium
    potatoes, peeled and cubed
  • 1/2 c
    diced, red onion or whatever you have...have used green onions
  • 1/4 c
    olive or vegetable oil
  • 1/3 c
    fresh parley, or dried will do
  • 6
  • 1/4 c
  • 2 slice
    bacon, cooked crisp and crumbled
  • 2 - 3 slice
    cooked deli ham ( i use virginia baked) any ham will do..cut up in bite sized pieces
  • ·
    salt and pepper
  • 1/2 tsp
    garlic powder
  • 1 clove
    garlic, minced
  • 1 Tbsp
    shredded parmesan cheese

How to Make Skillet Potato Brunch - Cass's


  1. Gather ingredients..always makes things easier.

    Cook bacon, drain, set aside
  2. In a 12 inch skillet ( ovenproof preferable..I use my iron skillet) cook potatoes in oil and a little of the bacon grease, over medium - high heat, for 10 - 15 minutes or until golden brown, stirring occasionally. Season with garlic powder.
  3. Add the onions, parsley and garlic; cook until tender. Reduce heat to medium.
  4. In a bowl, beat eggs, water, salt and pepper. Add the ham to the potatoes, heating through.
  5. Pour the egg mixture over the potatoes; sprinkle the bacon crumbles and parmesan evenly over the eggs, cover and cook 10 - 15 minutes until almost set
  6. When almost set, I placed the pan under the broiler to finish cooking the eggs. Watch not to burn. About 3 minutes.
  7. Cut into wedges and enjoy the flavors of the bacon, ham, garlic and potatoes..this is even better a few hours later, after all the flavors merry together..

    Serve with sour cream of desired.
