According to my Deviled Eggs book and quoted by Debbie, "Growing up as a Southerner, pimento cheese was my peanut butter--the satisfying food that we always had in the house for when the hungries struck. This may be my ultimate comfort food deviled egg, combining two of my favorite goodies in one." I liked how she told about her own personal love for pimento spread and how it is very popular in the South. It is a new egg for me and I enjoyed it very much! The garlic was just a little strong for me and I think I would maybe omit it the next time but other than that it was a really tasty eggs.

Notes from book:Eggstraordinary! Eggshells are so porous that they will allow the egg to absorb flavors from nearby items. Placing a truffle or less pleasantly, an onion, in or near the carton will infuse the eggs with that flavor.
