I'm always trying to come up with quick and easy breakfast ideas that are different and delicious. This one is all of the above! You can either use bacon that you've cooked or use the pre-cooked packaged bacon or bacon bits to make it extra quick and easy. Fried eggs "over easy," melted cheese, turkey or ham and bacon, all on a crispy (or soft, your choice) tortilla. Is your mouth watering yet? Mine is!

Ingredients For over easy loaded breakfast tostada

  • 1 lg
    flour tortilla
  • 1/4-1/3 c
    shredded sharp cheddar cheese
  • 1 slice
    roasted turkey or ham lunchmeat, chopped
  • 1 tsp
    butter
  • 2 lg
    eggs (local farm-fresh preferred)
  • 1 Tbsp
    real hickory smoked bacon bits
  • 1-1 1/2 tsp
    minced fresh chives
  • 1 pinch
    salt & pepper to taste

How To Make over easy loaded breakfast tostada

    Gather and prep all ingredients.

    For crispy tortilla: Place tortilla in medium or large nonstick skillet; warm over medium heat until bottom side of tortilla develops brown spots and feels crispy; flip tortilla, sprinkle with cheese and reduce heat to low. (See #4.)

    For soft tortilla: Place tortilla in medium or large nonstick skillet with lid; sprinkle with the cheese; cover with lid; warm over low heat for 2-3 minutes.

    While tortilla is warming, heat chopped lunchmeat, in a small nonstick skillet, over medium/medium high heat, for 1-2 minutes, stirring often.

    Scatter warmed turkey/ham over cheese; check bottom of tortilla; for crispy tortilla, increase heat slightly if it's not browning and leave uncovered (be sure to keep an eye on it while frying eggs;) for soft tortilla, make sure bottom is not browning and replace lid.

    Add butter to skillet used to warm lunchmeat; melt over medium heat.

    Crack each egg and add to skillet; fry in butter, over medium heat, for approximately 2 minutes.

    Carefully turn eggs over and fry for another minute or so (egg yolks should be warm, yet runny and the whites should be firm. In other words, over easy.)

    Shut off heat for both burners; slide eggs onto prepared tortilla.

    Sprinkle with bacon bits and chives and salt and pepper to taste. Serve immediately.
