I first had Migas at a Bunco weekend. It was like falling in love. Now I have to have them at least every two weeks.

Ingredients For migas

  • 8
    large eggs
  • 1/4 c
    half and half
  • 1 bunch
    green onions
  • 1 jar
    pimentoes chopped
  • 1 1/4 c
    colby jack cheese
  • 6 lg
    corn tortillas
  • 1/4 c
    corn oil
  • salt
  • pepper
  • 1/2 stick
    butter

How To Make migas

  • 1
    Heat oil in cast iron skillet. Cut tortillas into strips and fry until crisp. Drain on paper towels. Set aside. Sprinkle with salt.

    Melt 1/2 stick of butter in skillet. Add green onions and pimentoes and saute. Meanwhile mix eggs,cream, salt and pepper until frothy. Add to skillet and cook slowly, drawing spatula across bottom to scramble. Do not over do. Add cheese and corn tortillas let cheese melt then serve piping hot.

    You can also add peppers if you like heat. I usually serve with sliced tomatoes and avocodos.
