midnight in y-town scramble

Oh, it's quite obvious that I was craving food late one night and this was the result. Although, I do love breakfast for any meal. This was an unusual mixture for me. I never use ketchup on eggs nor do I put sun dried tomatoes in the mix but in a deciding moment I opted to try. Wow, these eggs tasted so fabulous! Whether it was the result of midnight cooking or my cravings I'm not sure. But, I've made this several times since and it's still yummy. So, I thought I should post it. Next time, I'll take better pics but for now it's my midnight muse original pics. It's a simple meal but good.

Ingredients For midnight in y-town scramble

  • 1/2
    green pepper, sliced
  • 1/4 c
    onion, diced
  • 2 md
    sun dried tomatoes, sliced
  • MIX IN BOWL
  • 6 lg
    eggs
  • 1/3 c
    cottage cheese
  • 3 Tbsp
    half n half
  • 2 pinch
    salt n pepper
  • TOPPING FOR EGGS
  • ketchup
  • A SIDE FOR THE EGGS
  • cottage cheese
  • crushed pineapple
  • MUST FOR MIDNIGHT EATS
  • 6 - 8 slice
    bacon, fried crisp

How To Make midnight in y-town scramble

    Saute the peppers & onions in a little butter.....wait to add the sun dried tomatoes at the end just to warm them.

    Whip up the eggs, cottage cheese, half n half, salt n pepper & add to your sauteed veggies.

    Cook up eggs up light & fluffy.

    Either serve in a flour tortilla with bacon and ketchup (or hot sauce for those who must)

    Serve up on a plate & try the ketchup if you haven't before. I NEVER put ketchup on my eggs but for some reason I decided to try it and I liked it. LOL. --- So many people do love ketchup on their eggs but overall I still prefer hot sauce. It worked this particular night and tasted so fabulous to me. I was very hungry!
