Ingredients

  • 2 large
    ripe tomatoes, seeded and chopped
  • 1/3 c
    onion, finely chopped
  • 1 clove
    garlic, chopped finely
  • 2 Tbsp
    butter
  • 1 Tbsp
    extra virgin olive oil
  • 8
    eggs
  • ·
    salt and pepper
  • 1 Tbsp
    italian flat parsley, chopped finely

How to Make MALTESE BREAKFAST SCRAMBLE

Step-by-Step

  1. Cook onions and garlic in 1 T oil and 1 T butter until soft.
  2. Add the tomatoes and cook for 5 minutes.
  3. Beat the eggs and add salt and pepper.
  4. Pour the eggs onto the onion and tomato mixture.
  5. Add the remaining butter and parsley immediately.
  6. Stir continuously over low heat until the eggs are barely set.
  7. Serve Immediately
