Turn leftover mashed potatoes into a breakfast or brunch delight just by adding cheese, bacon, chives, a little butter and a fried egg. Different and delicious!

Ingredients For loaded breakfast potato pancake

  • 1 Tbsp
    butter (divided)
  • 1/4 c
    leftover mashed potatoes (no instant)
  • 1 Tbsp
    shredded cheddar cheese (plus extra for garnish)
  • 1 tsp
    real bacon bits (plus extra for garnish)
  • 1 tsp
    chives (plus extra for garnish)
  • 1 lg
    egg

How To Make loaded breakfast potato pancake

    Gather and prep ingredients.
  • Melting butter in skillet.

    In small skillet (preferrably nonstick,) melt 1/2 tablespoon butter over medium-low heat.

    While butter is melting, mix together the mashed potatoes, cheese, bacon bits and chives; form into a tight patty.
  • Loaded potato patty frying in butter in skillet.

    Fry in the melted butter, over medium heat, for approximately 2 minutes or until edges are well browned.
  • Frying poato patty on second side.

    Gently shake the skillet to loosen patty; use a spatula to flip patty; fry for approximately 2 minutes or until edges are well browned.
  • Fried potato patty on plate.

    Slide patty onto serving plate; set aside.
  • Wiping skillet with paper towel.

    Use a paper towel to wipe brown bits from skillet.
  • Butter melting in skillet.

    Place skillet back on stove; add and melt remaining 1/2 tablespoon butter over medium-low heat.
  • Egg frying.

    Crack egg into melted butter; fry over medium heat until white of egg is almost totally cooked (about 2 minutes;) use spatula to flip egg. Shut off heat. Allow egg to remain in skillet for about 1 minute for "over easy."
  • Sliding fried egg out of skillet onto fried potato patty.

    Slide fried egg onto fried potato patty.
  • Fried egg on fried, loaded potato patty, garnished with cheese, bacon and chives, oozing yolk.

    Garnish with additional cheese, bacon bits and chives. Serve immediately.
