I made lots of Easter eggs this year! I was going to make scrambled eggs and they were all hard-boiled, so this was the result!!

Ingredients For easter egg sandwich

  • 2
    hardboiled eggs, sliced
  • 4 slice
    bread, lightly toasted
  • 2 slice
    provolone cheese (or any cheese)
  • all-purpose seasoning (i used chef prudhomme's no salt seasoning
  • salt to taste
  • whole grain mustard (optional)
  • butter/cooking spray or oil for pan

How To Make easter egg sandwich

  • 1
    Heat butter, spray or a bit of oil in a cast iron skillet on medium/high. Lightly toast the bread.

    On one slice of toast, spread mustard (if using), then arrange the sliced egg, sprinkle with seasoning and salt. Cover with cheese. Top with last slice of toast.

    Place both sandwiches in buttered skillet. Heat for a few minutes until cheese starts to droop, flip sandwiches. Cook until toast is slightly browned.
