Ingredients For cheesy bakes eggs with creamy greens

  • 1 (5 oz) pkg
    super greens (chard, arugula, spinach)
  • 2 Tbsp
    olive oil
  • 8 lg
    eggs, divided
  • 1/2 c
    half and half
  • 2 tsp
    dijorn mustard
  • 1/2 tsp
    kosher salt
  • 1 c
    shredded gruyere cheese, divided. (swiss can be used also)
  • 1/4 tsp
    pepper

How To Make cheesy bakes eggs with creamy greens

    Preheat over 400 degrees Fahrenheit. Saute greens in hot oil in large ovenproof skillet over medium-high heat for 2-5 minutes until wilted.

    Whisk together 2 eggs, cream, mustard, salt, and 2/3 cup cheese in a bowl. Add to skillet; cook 2 minutes.

    Carefully crack 6 eggs into the skillet in a single layer; sprinkle with 1/3 cup cheese and pepper.

    Transfer skillet to over. Bake 10 to 15 minutes or until eggs are cooked to desired doneness.
