This is more about the method than an actual recipe. I make a big batch of scrambled eggs, hash browns, and bacon. My guys use the extra to make breakfast bowls during the week. My daughter was so upset that she overslept and missed this breakfast, that she came over in her PJs just to have the few that were left. They are that good.

Yum! What more could you ask for on a Saturday or Sunday morning?! These egg bundles are the best. It's everything you love about breakfast - eggs, bacon, cheese, and hash browns - wrapped in biscuit dough. Then, the bundles are smothered in a warm and thick county gravy. So good.

Ingredients For breakfast bundles with country gravy

  • BUNDLES
  • prepared scrambled eggs
  • prepared hash browns
  • cooked, crumbled bacon, reserve drippings
  • shredded cheddar cheese
  • canned biscuits
  • COUNTRY GRAVY
  • 3 Tbsp
    bacon drippings
  • 1 Tbsp
    butter
  • 4 Tbsp
    all-purpose flour
  • 2 c
    milk or cream (I use both)
  • salt and pepper

How To Make breakfast bundles with country gravy

  • Preheating the oven.

    Preheat oven to 375F.
  • Flattening the biscuits.

    Take each biscuit and flatten using the palm of your hand. Flip it over and flatten again.
  • Cheese, hash brown, bacon, and scrambled egg on the biscuit.

    Pile a little cheese, hash brown, bacon, and scrambled egg in the center of each biscuit.
  • Sealing the biscuits and baking.

    Pull up and pinch close the biscuit so everything is sealed inside. Place seam side down on a foil-lined pan sprayed with cooking spray. Bake for approximately 10 minutes until bundles are done and lightly golden.
  • Melting butter in bacon grease.

    While biscuit bundles are baking, making the country gravy. Melt the butter in the bacon grease.
  • Whisking flour into butter and bacon grease.

    Add in the flour and whisk. Cook for a couple of minutes.
  • Milk and pepper added to the grease.

    Add in milk or cream, whisk and cook until thickened. Season liberally with pepper and salt to taste.
