bread-less breakfast muffins

I was planning on making breakfast burritos one evening for dinner. Just as I was getting ready to start cooking, I decided I wanted something different. So, I took all the ingredients and came up with these muffins. They are great for kids and make a great brunch treat.

Ingredients For bread-less breakfast muffins

  • 1/2 lb
    ground pork sausage
  • 6
    eggs
  • 1/2 c
    cheese, shredded
  • splash
    milk
  • salt and pepper to taste

How To Make bread-less breakfast muffins

    Preheat oven to 350 degrees. Lightly grease mini muffin tins with cooking spray.

    In a small skillet, cook sausage until no longer pink. Drain grease. Set aside to cool.

    In a small bowl, beat eggs with milk, salt and pepper. Add in cheese and sausage, stirring until well combined. Pour into muffin tins, filling each to 2/3 full. Bake for 20 minutes or until knife comes out clean.

    Optional: serve with Sausage/Cheese Taquitos. Recipe for taquitos: Cook 1/2 lb pork sausage until no longer pink. Take a whole wheat tortilla, top with 1/6 sausage and shredded cheese. Roll into log shape and place in baking dish, seam side down. Repeat with remaining sausage. Bake at 350 for 15 minutes.
