This is a delicious recipe that is much healthier and fresher than the purchased granola. You control the sweetening. You can use all maple syrup to make it vegan. Switch the nuts if you prefer. I don't put dried fruit in it until after it is cooked. The fruit would dry up too much. Add raisins, chopped apricot, berries or whatever you like after the granola has cooled.
Can be used to top ice cream or other desserts.

Ingredients

  • 6 c
    old fashioned rolled oats
  • 1 c
    almonds, chopped
  • 1 c
    walnuts, chopped
  • 1 c
    raw, unsalted pepitas (hulled pumpkin seeds)
  • 1/2 c
    maple syrup
  • 6 Tbsp
    canola oil or coconut oil
  • 1/4 c
    honey
  • 1 tsp
    ground cinnamon
  • 1 tsp
    pure vanilla extract
  • 1 tsp
    salt

How to Make Elaine's Homemade Healthy Granola

Step-by-Step

  1. Preheat oven to 325 degrees F. Line a roasting pan or large baking sheet with parchment paper.
  2. Combine oats, almonds, walnuts and pepitas in a large bowl. Whisk oil, maple syrup, honey, cinnamon, vanilla and salt in a medium bowl until blended. (Measure the oil first, then use the residue in the cup to grease the measuring cups for the maple syrup and honey.)
    Pour over the oat mixture and toss to coat. Spread the mixture in the prepared pan.
  3. Bake, stirring every 10 to 15 minutes, until lightly and evenly browned and starting to dry out, 50 minutes to 1 hour. Do not leave the granola unattended during this time. It can overcook very easily if not stirred regularly.
  4. When it is lightly and evenly browned throughout remove from oven and cool completely in the pan. When cool it can be stored for future use.
