Do you ever skip breakfast because you don't have enough time? One Breggfast Square is a breakfast bar that you can take with you. I keep them individually wrapped in the freezer. When I need to take a snack lunch and don't have time to make a proper meal, I take one of these out of the freezer and take it to my meeting.

The calorie count will depend on how much sugar is in the granola. Try my healthy Home Made Granola recipe.

Ingredients

  • 3 c
    granola, home made or manufactured
  • 1 1/2 c
    brown sugar (a bit less if your granola has a lot of sugar in it)
  • 1/3 c
    white or fine textured whole wheat flour
  • 1 tsp
    baking powder
  • pinch
    salt
  • 3/4 c
    raisins or dates
  • 1 tsp
    lemon zest, grated (optional)
  • 3
    eggs, slightly beaten
  • 1/2 c
    vegetable oil

How to Make Breggfast Squares

Step-by-Step

  1. Stir together first 5 ingredients in medium bowl. Add raisins or dates.
  2. Make a well in the center of the dry ingredients. Stir in combined eggs and oil. Do not overmix.
  3. Oil the bottom of a 9 inch pan. (Optional: line pan with parchment to make removal of squares easier). Spread in bottom of the 9 inch square pan.
    Bake at 350 degrees F. for 30 minutes.
  4. Makes 9-3 inch squares. One square equals one breakfast serving =1/2 egg, 1/2 c. granola, 1/8 c. fruit
