Took a trip down memory lane yesterday for breakfast with my Nanie's Spiced Apple Pancakes with lots of butter and maple syrup on them. They are also good with a dusting of powdered sugar or with homemade chunky applesauce. I served both blueberry and maple sausages and some scrambled eggs alongside for a hearty breakfast.

Ingredients For spiced apple pancakes

  • 2 c
    all purpose flour
  • 4 Tbsp
    sugar
  • 2 tsp
    baking powder
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    ground ginger
  • 1/2 tsp
    ground allspice
  • 1 1/2 c
    milk
  • 2
    eggs
  • 2 Tbsp
    molasses, dark
  • 2 Tbsp
    vegetable oil
  • 4 md
    apples, diced i used granny smith but any type of apple will work

How To Make spiced apple pancakes

    Peel and dice apples, and set aside.
  • 2
    Combine the first six ingredients in a medium-size bowl.

    In another small bowl, beat egg, and combine with milk, molasses, and oil until well blended.

    Pour wet mixture into dry mixture and stir until just evenly blended. Stir in apples

    Pour 1/4 cup batter onto a hot, lightly greased griddle. Cook 2 to 3 minutes on each side, making certain center is cooked through.

    Serve with butter and maple syrup, or applesauce, or powdered sugar.
