Ingredients For weekend breakfast burritos

    tortillas, flour -i use https://www.justapinch.com/recipes/bread/bread-flatbread/homemade-flavored-flour-tortillas.html?p=1
  • 1 1/2 c
    frozen hash browns, thawed
  • 4
    tablespoons vegetable oil
  • 1/4 tsp
    salt
  • 6 oz
    fresh chorizo
  • 3
    eggs, beaten
  • 1 c
    cheese, shredded -i used a mix of cheddar and pepper jack

How To Make weekend breakfast burritos

    In a medium skillet on medium heat add 2 tablespoons vegetable oil, and salt.

    Add hash browns and cook until golden brown about 5 minutes.

    Flip and add the other 2 tablespoons of vegetable oil and cook until the bottom is golden - another five minutes.

    Remove and keep warm in oven while you finish the burritos.

    Add chorizo to the same skillet. Break down chorizo as you would ground beef.

    When it resembles cooked ground beef add the three beaten eggs.

    Stir until eggs are soft-scrambled. Turn off heat, top with cheese, and cover skillet until cheese has melted.

    Heat tortillas in microwave - about 15 seconds.

    On top of tortillas, add hash browns, chorizo mixture, and a couple heaping spoonfuls of salsa fresca.

    Roll up burrito style and enjoy!
