This is my German pancake recipe re-vamped to make a delicious & easy to grab meal/treat for my kid starting out on the SCD diet. This uses nut butter instead of almond flour or coconut flour, since the flours can sometimes be harder for people in an IBD flare. And, it actually has a better texture than when we tried it with the almond flour & coconut flour. With the cashew butter it is pretty much the same texture & taste as the original German pancake recipe...delicious! The cashew butter was the first nut we re-introduced to my kid’s diet, & it went well in very small amounts.
