This recipe was one of my Godmother's recipes that she made when she had weekend company or on holidays. She gave me the recipe book Butter N love back in 1984 which was my first cookbook and she had Contributed this recipe. This was nice to make when the boys were little I could prepare it the night before and get it in the oven quickly in the morning while getting them ready for daycare and they left the house with a hearty breakfast to ward of the crankies.

Ingredients For sandra's breakfast casserole

  • 8 slice
    day old bread (without crusts)
  • 2 lb
    fried link sausage
  • 3/4 c
    grated sharp cheddar cheese
  • 1/2 c
    sauteed mushrooms
  • 4
    eggs
  • 2 1/4 c
    milk
  • 3/4 tsp
    dry mustard
  • 1 can
    cream of mushroom soup
  • 1/3 can
    milk
  • cornflakes and melted butter

How To Make sandra's breakfast casserole

    Make layers of bread, sausage, cheese, and mushrooms. Combine eggs, milk and mustard; pour over layers. Refrigerate overnight.

    Before baking, spread the soup mixed with the milk over layers. Bake, uncovered, in a 9x13-inch pan at 325 degrees for 1 hour.

    Optional: cover with crushed cornflakes with melted butter before baking.
