Ingredients

2 ccrushed crackers (any flavor)

1 smallonion diced

1 smalldiced zucchini or yellow squash

1 mediumtomato diced

1 cbreakfast meat of your choice (pre-cooked)

6eggs - whipped together
-
1 cgrated cheese of your choosing

2 Tbsplight cream
-
1 tspsalt and pepper

2 Tbspolive oil, light
How to Make Healthy Breakfast Casserole
- Take crackers and olive oil mix together in bowl. Spread in baking dish evenly. Saute onions in water/oil mixture until clear and tender. Add vegatables (squash/tomatoes/zucchini), cook until tender. Spread meat over crackers, add layer of sauted vegtables. Whip eggs in separate bowl add the light cream/salt and pepper. Pour over the top of the other ingredients and sprinkle grated cheese on top. cover with foil and cook at 360 degree oven for 25 to 30 minutes. Serve with fresh fruit.
