This is a favorite of my entire family. It is easy enough to double the recipe, and it reheats for a quick leftover when in a hurry.

Ingredients For green breakfast burritoes

  • 12-18
    eggs
  • small pkg
    jimmy dean sausage{ground)
  • 2 sm
    tomatoes
  • 1/2 c
    sour cream
  • 1/2 can
    minced jalepenos
  • 16 oz
    monterey jack cheese
  • small can
    sliced olives
  • 1 pkg
    medium flour tortillas
  • 1 can
    chili verde green sauce

How To Make green breakfast burritoes

  • 1
    Beat eggs and scramble in large skillet that has been coated with cooking spray. When slightly runny add Sour cream and finish cooking.

    In another skillet brown package of Jimmy Dean sausage.
  • 3
    Dice tomatoes and add to sausage. Also add 1/2 can of minced jalepenos to the sausage.

    Add sausage mixture to the egg mixture and blend well together. Spoon generously into warmed tortillas one at a time. Fold up the bottoms then roll into a burrito and place in a large baking pan that has been coated with cooking spray.

    Place burritos close together with open end on the bottom of the pan.

    Sprinkle sliced olives over top of burritos.

    Pour can of green chili verde sauce over burritos and make sure they are completely covered.

    Sprinkle cheese over all the top and loosely cover with foil.

    Bake in 350 preheated oven for 25-30 minutes.
