A breakfast casserole, made with love! Perfect for Christmas morning - or any morning!

Blue Ribbon Recipe

With all the layers of yumminess, any family would love to wake up to this breakfast casserole on Christmas morning. We used the frozen shredded potatoes and it was quite delicious. It would be even better with fresh potatoes. The potatoes are a hearty base. The sausage, veggie, and cheese layer makes the casserole special. We were concerned about the amount of cheddar but it melted to perfection. Cottage cheese makes this layer nice and creamy. A fantastic breakfast casserole! The Test Kitchen
