  • 4 - 5 slice
    bacon, cut into 1 inch pieces
  • 2 c
    frozen shredded hashbrowns, thawed
  • 1/2 c
    green or red pepper, chopped
  • 1 1/4 c
    chopped fresh broccoli, or i have used frozen, and thawed
  • 1/2 c
    chopped red onion
  • 6
  • 3 Tbsp
    milk or water
  • 1/2 tsp
    crushed rosemary
  • 1/2 tsp
  • 1/4 tsp
  • 1/4 tsp
  • 2 Tbsp
    shredded parmesan cheese

How to Make Broccoli & Bacon Frittata


  1. Gather ingredients. Chop your vegetables, set aside

    Preheat oven to 350 degree.
  2. In an 8 inch ovenproof skillet, I use my well seasoned cast iron skillet.
    Cook bacon until crisp. Drain, leaving drippings in the skillet. Place bacon on paper towel.
  3. In the same skillet; add hash browns, broccoli, green pepper, onion and rosemary; cover and cook over low heat until hash browns are golden brown; stirring a few times. About 15 minutes.

    Add more liquid if necessary to keep from sticking, I have used chicken stock, or oil . The potatoes will suck up the bacon fat. The fat makes it taste so good!

    When finished cooking set aside.
  4. In a medium bowl, whisk the eggs, water or milk, salt and pepper.
  5. Pour over hash browns. Top with bacon, paprika and parmesan cheese.

    Bake uncovered for 25 to 30 minutes or until eggs are completely set.
  6. Enjoy!
