My version of Bob Evans Sunrise Squares. Great for leftovers too.

Ingredients For breakfast squares

  • 1 lb
    bob evans zesty hot sausage
  • 5 slice
    bread, cut or torn into 1/2-inch pieces
  • 1
    green pepper, diced
  • 1
    red pepper, diced
  • 1 sm
    onion, sliced
  • 1 can
    large sliced mushrooms
  • 2 c
    sharp shredded cheddar cheese
  • 6
    eggs
  • 3 c
    milk
  • 1 tsp
    dry mustard
  • salt to taste

How To Make breakfast squares

    Preheat oven to 350 degrees. Crumble and cook sausage in medium skillet over medium heat until browned. Drain off any drippings.

    Spread bread cubes in greased 9 x 13 baking dish; mix sausage, peppers, mushrooms, onion, and spread on top of bread cubes. Layer cheese over all. Whisk eggs, milk, salt and mustard until well blended; pour over cheese evenly.

    Bake 30-45 minutes or until toothpick comes out clean. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.
