How to Make Cheesy Grits & Smoked Sausage Casserole

Step-by-Step

  1. Preheat your oven to 350 degree F.

Spray a 3 quart casserole dish with nonstick cooking spray or grease. Set aside.

Saute the sausage in 1 tsp oil just till it starts to get some caramelization as it's already cooked. If using raw sausage cook until no longer pink, and starting to brown. Drain if needed.
  2. In a large saucepan, bring the 4 cups water to a boil. Stir in the grits and salt, reduce heat to medium. Cook for 2 1/2 - 5 minutes; stirring frequently, until nice and creamy.
  3. Stir in the cheddar cheese and butter until cheese is melted.
  4. Now, stir in the beaten eggs, milk and sausage.

    Pour into prepared baking dish.
  5. Sprinkle evenly with Monterey Jack cheese. Place in oven and bake for 25 - 30 minutes or until set and cheese is turning golden.
  6. Enjoy!
