This bread is so delicious! The warm spices combined with the apples and butternut squash are so pleasing to the palate! Like many of my recipes this is sugar free and low fat; but you wouldn't know it by the taste! It's so flavorful and just melts in your mouth! This is also kid tested AND approved! I think this is my 4 year old twin's favorite bread recipe yet. A cool thing with this recipe is that it could be used for/with any meal or as a dessert. I think Halo Vanilla bean ice cream on top would be divine! This is Weight Watchers friendly; on Freestyle 1 serving = 2 points. You'll love it!

Ingredients For spiced butternut squash apple bread

  • 3 lg
    egg whites
  • 1 lg
    egg
  • 2 3/4 c
    self rising flour
  • 1/2 c
    plain greek yogurt (i used fage total 0%)
  • 1 c
    hyvee delecta or any other granular sugar substitute like truvia or swerve
  • 1/4 c
    truvia brown sugar blend
  • 1 tsp
    pure vanilla extract
  • 2 md
    apples (diced)
  • 3/4 tsp
    baking soda
  • 1 1/2 c
    butternut squash, mashed
  • 1/4 tsp
    ground cloves
  • 1 tsp
    ground cinnamon
  • 1/8 tsp
    ground ginger
  • 1/4 tsp
    ground nutmeg

How To Make spiced butternut squash apple bread

    Preheat oven to 350
  • Whisking flour, soda, and spices together

    In a medium bowl whisk together flour, soda, and spices. Set aside.
  • Peel and finely dice apples

    Peel and finely dice apples. Set aside.
  • Beat egg whites and whole egg until fluffy bubbly

    In a large bowl beat egg whites and whole egg on high speed until bubbly/fluffy.
  • Beat sugars, vanilla, and yogurt until smooth

    Add in sugar substitute, brown sugar blend, yogurt, and vanilla. Beat on medium speed until completely smooth.
  • Incorporated butternut squash

    Add in butternut squash and beat on low until incorporated (literally less than 30 seconds!).
  • Flour mixture combined with wet mixture

    Pour in flour mixture and stir to combine.
  • Apples folded in

    Fold in the apples.
  • Batter poured and smoothed out in bread pan

    Pour batter into bread pan lined with parchment paper. Smooth/even out the top as much as possible.

    Place in oven and bake for about 40 minutes. A toothpick inserted in the center will come out clean.
  • Finished!

    Remove from oven and let sit in pan for about 10 minutes. Then remove bread from pan by gently pulling up on the parchment paper and transfer to cooling rack.
