Ingredients For reduced calorie lemon blueberry bread

  • butter flavored cooking spray. (i'll use any brand except pam, it's gross)
  • 1 c
    all purpose flour
  • 1 c
    whole wheat white flour
  • 1 Tbsp
    baking powder
  • 1 tsp
    salt
  • 1/2 c
    sugar
  • zest
    from 1 whole lemon
  • 1 c
    skim milk
  • 2 lg
    eggs
  • 1/4 c
    unsweetened applesauce
  • 1-2 c
    fresh or frozen blueberries
  • OPTIONAL GLAZE
  • 2 Tbsp
    fresh squeezed lemon juice
  • 1/2 c
    powdered sugar (adjust to your perfect consistency if needed)
  • 1 dash
    lemon extract ( a couple of drops)

How To Make reduced calorie lemon blueberry bread

    Preheat oven to 350 degrees. Spray an 8x5 loaf pan genrously with butter flavored cooking spray.

    In a large mixing bowl, sift together flours, sugar, baking powder and salt.

    Zest a whole lemon into a medium mixing bowl. Add, applesauce, eggs, milk and whisk together until combined.

    Add to dry mix along with fresh or frozen blueberries. Stir with a spatual until just combined.

    Bake at 350 for 1 hour. Let cool for 10 minutes in pan, then turn out onto a rack to cool completely.

    For the Glaze. Combine all ingredients lemon juice, lemon extract and powdred sugar in a small mixing bowl and beat with an electric mixer. Add more sugar or liquid as needed to reach desired consistency.

    I serve the glaze on the side with a spoon if anyone wants it. Or skip the glaze all together to keep the calories lower.
