Humbleness is a great gift, and ordinarily I never think I make the best of anything, it is the best I know how to make but not necessarily the best. However, let me do say I do believe I make the best pumpkin bread. My grand daughter also thinks it is the best, she says I try others but yours is always so moist and so tender and so much flavor... No I didn't pay her and you can never shut a 15 year old up and they always think everyone else does it better.

Ingredients

  • 3 c
    sugar
  • 4
    eggs
  • 1 can(s)
    pumpkin puree (2 cups fresh puree)
  • 1 c
    butter melted
  • 1/2 c
    water
  • 3 1/2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1 1/2 tsp
    salt
  • 1 tsp
    cloves
  • 2 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1 tsp
    ginger
  • 1 c
    nuts, chopped (optional)
  • MAPLE CREAM CHEESE

  • 4 oz
    cream cheese, room temperature
  • 2 Tbsp
    butter, room temperature
  • 4 Tbsp
    sugar
  • 1/8 to 1/4 tsp
    maple extract

How to Make Pumpkin Bread with Maple Cream cheese

Step-by-Step

  1. Preheat oven to 350 degrees. Prepare two loaf pans or a bundt pan by lightly oiling it and lightly flouring it. Altho I must admit last night I did not use flour at all. But I do have the original heavy duty Bundt pan.
  2. Mix flour, salt, baking soda and all spices. Remove 1/2 cup and set both aside.
  3. Cream eggs with sugar until light and lemon colored, 3-5 minutes. Add pumpkin and mix well.
  4. Add the larger amount of flour and blend well.
  5. Mix water with butter and add to the batter slowly while mixing.
  6. Sprinkle the remaining flour over nuts and stir. Then stir into batter by hand so as not to break up nuts.
  7. Pour into prepared loaf pans or Bundt pan. Bake for 60-75 minutes or until done.
  8. For Maple Cream Cheese, mix all ingredients well. Beat till creamy.
  9. Notes: I do not use nuts but you could also use pepitos if desired. Also if you do not like a certain spice you can always change it to more of your favorite or try something totally new like Cardamom.I have also taken sugar and added a few drops of maple flavor and mixed it thorougly to make a maple sugar and sprinkled it in the pan before adding the batter to the pan instead of flour.
