My mom was a Home Economist and raised us 4 children after my parents were divorced. She had a hand-written cookbook that had this recipe in it. I made it for the Jefferson County Fair on August 28, 2010, and it won First Place.

If you love banana bread, then an easy recipe is a necessity. This recipe is one of those. Once baked, the banana bread is tender and filled with banana flavor. It's dense enough to hold its shape but at the same time light and fluffy. We can see why Judi won first place for this delicious banana bread recipe. Enjoy a slice on its own, or slather with a bit of butter. Yum!

Ingredients For first place banana bread

  • 1 3/4 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1 1/2 tsp
    baking powder
  • 1 tsp
    cream of tartar
  • 1/2 tsp
    salt
  • 1/3 c
    shortening
  • 2/3 c
    sugar
  • 2
    eggs
  • 1 c
    banana pulp (3-4 ripe bananas)

  • Oven preheating to 350 degrees.

    Preheat oven to 350 degrees.
  • Mashing ripe bananas.

    Mash ripe bananas with a fork.
  • Shortening, sugar, and eggs mixed together.

    Cream together shortening and sugar. Add eggs, mixing well.
  • Flour, baking soda, baking powder, cream of tartar, and salt in a bowl.

    In another bowl, sift together flour, baking soda, baking powder, cream of tartar, and salt.
  • Slowly adding flour to the wet mixture.

    Add flour mixture a little at a time.
  • Mixing in mashed bananas.

    Alternating with banana mixture, mixing well after each addition.
  • Batter poured into a loaf pan.

    Turn into greased loaf pan.
  • Banana bread baking in the oven.

    Bake for 45 minutes to 1 hour, or until the top is brown and a toothpick inserted comes out clean.
  • Loaf of First Place Banana Bread ready to be sliced.

    Let cool in pan for 5 minutes then turn out onto cooling rack.
