My son Casey, 31, has never taken an interest in cooking or baking. Mom being a professional baker for most of his life, may have inhibited him. Or thought, why bother, mom will make it. : ) He recently bought himself a Ninja blender for making his protein shakes. He decided to try making banana bread from their cookbook. He changed it and used white whole wheat flour and cinnamon instead of lemon juice, because thats what we had. It turned out so good. I can honestly say it is better than any banana bread I have ever made. His g/f thought I had made it and didn't believe he had until she asked me. Way to go, Casey(our new official banana bread baker) hehe

Ingredients For casey's banana walnut bread

  • 1/2 c
    butter, softened
  • 3/4 c
    white sugar (can sub splenda, truvia or 1/2 sugar & 1/2 sweetner)
  • 2 lg
    eggs
  • 2 large or 3 small very ripe bananas, mashed
  • 1 tsp
    vanilla bean paste (can sub vanilla extract)
  • 1/2 c
    milk
  • 2 c
    white whole wheat flour(can sub ap flour)
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/2 c
    walnuts, chopped

How To Make casey's banana walnut bread

  • 1
    Preheat oven to 350 degrees. Prepare loaf pan by spraying with Pam. In mixing bowl, cream sugar & butter together until well blended. Beat in eggs one at a time until light and fluffy. Mix in vanilla, milk & bananas. Stir together flour, BP, BS, salt, & cinnamon. Blend into creamed mixture just until mixed. Stir in walnuts. Pour into loaf pan and bake for 55-60 minutes until golden brown. Cool in pan for 15 minutes. Turn out onto cooling rack and cool completely (if u can wait that long, we can't) We love it warm, spread with real butter. yummm. Enjoy!
