blueberry scones

When I began learning to cook I basically knew little about cooking. As some mothers run the kids out of the kitchen and not in. Years later I remember making cookies for my little ones that looked like scones. I told a friend my cookies looked like biscuits. That's when she asked if I used baking powder ? She corrected my mistake as we had a good laugh. Happily the children loved them!

Ingredients For blueberry scones

  • 2 c
    all purpose flour
  • 2 tsp
    baking powder
  • 3/4 tsp
    salt
  • 1/4 c
    sugar
  • 1/2 c
    unsalted butter
  • 3/4 c
    blueberries, fresh
  • 1/4 c
    coarsely chopped almonds
  • 1 Tbsp
    fresh orange zest
  • 3/4 c
    whole milk
  • 1/4 tsp
    almond extract

How To Make blueberry scones

    preheat oven to 450 degrees Fahrenheit.

    In large bowl sift together flour, baking powder, salt, and sugar.

    Add butter pieces cutting with pastry knife or fork until mixture resembles coarse meal.

    Stir in fresh berries, almonds, and orange peel. Make a well in center and pour in milk and almond extract.

    With rubber spatula, quickly blend ingredients into soft, slightly wet dough.

    Turn dough onto well-floured work surface. Lightly sprinkle dough with flour. Pat into a 7-inch circle. Cut into 8 wedges.

    Place wedges 2" apart on greased baking sheet. Bake 12-15 minutes until lightly browned. Serve warm. Makes 8 scones.
