Wouldn't this be nice with a large salad and some hot tea? Can't recall where this recipe came from, but is good slathered with butter or spread with a bit of apricot preserves.

Ingredients For apricot bread

  • 3/4 c
    dried apricots
  • 3/4 c
    sugar
  • 2 Tbsp
    canola oil
  • 1
    egg
  • 1/4 c
    water
  • 1/2 c
    orange juice
  • 1 c
    unbleached white flour
  • 1 c
    whole wheat pastry flour
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    finely chopped walnuts

How To Make apricot bread

    Soak apricots for 20 minutes in hot water to cover. Drain and chop apricots into 1/4-inch pieces. Set aside.

    Beat sugar, oil and egg together in a mixing bowl. Stir in water and orange juice. Add white flour, pastry flour, baking powder, baking soda and salt, mixing until thoroughly combined. Stir in walnuts and apricots.

    Pour batter into a buttered 9-inch loaf pan and bake in a 350-degree oven for 55 to 65 minutes or until a wooden pick inserted into the center of the loaf comes out clean. Cool in the pan for 15 minutes. Remove to a wire rack to continue cooling.
