Ingredients For the most amazing mexican cornbread

  • 1 box
    jiffy cornbread mix
  • 1/2 cup
    self rising flour
  • 1/4 cup
    corn oil
  • 2
    eggs, beaten
  • 1 cup
    buttermilk
  • 1 sm. can
    creamed corn
  • 1 15.25
    can whole kernel corn
  • 1 med.
    onion minced
  • 1
    jalapeno peppers
  • 1 tsp
    crushed red pepper
  • 1 tsp
    sugar
  • 12 oz
    sharp cheddar cheese shredded, divided

How To Make the most amazing mexican cornbread

    Mix all ingredients well.

    Fold in corn, and cheese reserving some cheese to sprinkle on top.

    Add to a prepared 9x13 inch baking dish. Bake 350, for 1 hour.

    Let cool, to room temperature.
