This is so so yummy. I just love bruschetta, and this is a nice variation of the classic.

Wow, this is not your basic bruschetta recipe. Filled with tomato, garlic, and basil flavors the tomato bruschetta is delicious. A hint of balsamic vinegar adds a nice tang. There's a ranch dressing and Parmesan cheese mixture that's spread over the toasted bread. Then it's topped with smoky bacon bits, chunks of chicken, a dollop of tomato bruschetta, and a sprinkle of mozzarella cheese. With layers of flavor, this bruschetta is a hearty appetizer that could almost be a light meal.

Ingredients For chicken bacon ranch bruschetta

  • 2
    baguettes of French or Italian bread
  • 4
    boneless chicken cutlets, cooked and cubed, or pre-cooked chicken fajita meat
  • 6 slice
    bacon, cooked and crumbled
  • 3/4 c
    ranch dressing
  • 1/4 c
    Parmesan cheese, finely grated
  • 3-4 c
    mozzarella cheese (shredded)
  • tomato bruschetta, recipe below
  • TOMATO BASIL BRUSCHETTA

    plum tomatoes, ripe
  • 2 clove
    garlic, minced
  • 1 Tbsp
    olive oil, extra virgin
  • 1 tsp
    balsamic vinegar
  • 6-8
    fresh basil leaves, chopped

How To Make chicken bacon ranch bruschetta

  • Diced tomatoes, garlic, olive oil, balsamic vinegar, and basil in a bowl.

    If making homemade bruschetta prepare that first. Preheat oven to 400. While the oven is heating, chop up the tomatoes finely. Put tomatoes, garlic, 1 Tbsp extra virgin olive oil, and vinegar in a bowl and mix. Add the chopped basil. Add salt and pepper to taste.
  • Baking baguette slices.

    Slice baguettes 1/2 and inch thick. Brush with olive oil and toast in preheated oven for 5 to 6 minutes. You don't want them well done just slightly toasted.
  • Cooking chicken cut into cubes.

    Now, season the chicken with salt and pepper. Saute in a little bit of olive oil until cooked. If using pre-cooked fajita chicken mix, cook as directed on the package. Cube the cooked chicken into small pieces.
  • Crumbled crisp bacon on a plate.

    Cook bacon crisp. Crumble into small pieces.
  • Ranch dressing and Parmesan cheese mixed together.

    Mix ranch dressing and Parmesan cheese in a small bowl.
  • Ranch mixture spread on the toasted bread.

    Spread prepared dressing on toasted baguettes slices. Not too much or it will make bread a bit soggy.
  • Chicken, bacon, bruschetta, and cheese on top of the bread and baking.

    Add a few pieces of chicken, bacon, and a small dab of the tomato bruschetta. Top with a pinch of mozzarella cheese and bake for 8-10 minutes more or until cheese is nicely melted.
