toaster oven spelt scones

We love Scones! We especially love homemade ones. I have found this recipe to be really reliable. You can put all sorts of goodies in the scones. In this recipe I added currants, pine nuts and chopped pecans. I left out the sugar because the currants are sweet. Plus I love to add jam or preserves on the Scones. They also add to the sweetness.

Ingredients For toaster oven spelt scones

  • 2 c
    white spelt flour
  • 1/2 c
    sprouted spelt flour
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    sea salt
  • 8 Tbsp
    cold unsalted butter, cut up
  • 1/4 c
    sugar (1/3 cup if you like them sweet)
  • 2/3 c
    milk

How To Make toaster oven spelt scones

    Preheat Toaster Oven to 375'F. Melt some butter or ghee. Brush the melted butter/ghee in the cavities of the silicone pan. Make sure you grease the whole thing, even the top part. Just in case the scone gets larger than the cavity it won't stick that way.

    Mix the flours, baking powder and salt in the bowl of your food processor. Add in the cold butter and pulse a few times, but don't over do it.

    Add in the sugar and pulse a few more times. At this point you can throw in some nuts or currants if you like. Pulse a few times to mix the fruit and nuts. Be careful you don't pulse them too small, it's nice to bite into them.

    Add in the milk and process until the dough forms a crumbly ball. Spelt doesn't like to be mixed too much, so less is better.

    At this point, put your silicone pan on a flat baking dish that fits in your toaster oven. I used my pizza pan that came with the oven. It fit perfectly.

    Remove the dough to a bowl and make sure it's all stuck together in a ball. Take 8 equal portions and fill the cavities. Pat the dough down into the cavity so it's about 1/2 full. Brush with melted butter or ghee, it adds a nice topping.

    Bake in your preheated toaster oven for 20 minutes.

    When done, remove the silicone pan and the pan under it together. It makes moving the silicone pan so much easier. Don't removed the pan under the silicone pan, leave it there and set them on a cooling rack.

    Cool this completely. When it's cool take a plate and put it on the top of the silicone pan and turn upside down. Set it on the counter. Slowly and carefully pinch the silicone pan on the bottom to remove the scones.

    Mine came out without any problems. I hope you give this recipe a try. I put fruit sweetened Strawberry Preserves on mine.
