Soda bread is simple, rustic, and never pretentious. The Riley family has hit the nail on the head. From the firm crust to the moist center, this is a perfect soda bread. Spread with a little butter or use it to sop up broth from your favorite stew. With or without raisins, this bread is a great addition to any meal but also shines on its own.

Ingredients For riley family soda bread

  • 3 c
    all-purpose flour
  • 1 Tbsp
    sugar
  • 2 tsp
    baking soda
  • 1 tsp
    salt
  • 1 c
    low-fat buttermilk
  • 1/2 c
    natural applesauce
  • 2 Tbsp
    butter, melted
  • 1/2 c
    raisins, optional
  • 2 Tbsp
    milk

How To Make riley family soda bread

  • Spraying a cake pan with cooking spray.

    Preheat oven to 375 degrees. Spray an 8 inch round cake pan with cooking spray.
  • Dry ingredients combined in a large bowl.

    In a large bowl, combine flour, sugar, baking soda, and salt.
  • Buttermilk, applesauce, and butter combined in a small bowl.

    In a small bowl, combine buttermilk, applesauce, and butter.
  • Adding wet to dry ingredients.

    Add applesauce mixture to flour mixture.
  • Stirring until dough forms a ball.

    Stir until mixture forms a ball.
  • Adding raisins to the dough.

    Turn out dough onto well-floured surface; knead in raisins. If not adding raisins, knead 10 times.
  • Patting dough into a 6-inch round ball.

    Pat dough into a 6" round.
  • Cutting a cross into the top of the dough.

    Place dough in prepared pan. Cut a cross in the top of the dough, 1/4 inch deep, with the tip of sharp knife.
  • Brushing dough with milk.

    Brush top of dough with milk.
  • Toothpick coming out of the bread clean.

    Bake 35 minutes or until a toothpick inserted in center comes out clean.
  • Cooling the bread before removing from the pan.

    Cool in pan 10 minutes. Invert onto wire rack; turn right side up. Cool completely before slicing.
