perfect white bread

I love to bake bread. I was recently going through old cookbooks that belonged to my mom. She had one where she had written lots of recipes on blank pages or wherever she could find a place. This is one that was written into the book. I used to make this bread years and years ago and had forgotten about it. I made it again this week and it brought back memories of my mom baking bread. It was just as I remembered it when she made it. The prep time listed is minus rising time.

Ingredients For perfect white bread

  • 2 1/4 tsp
    yeast
  • 1/4 c
    warm water
  • 2 c
    milk, scalded
  • 2 Tbsp
    sugar
  • 2 tsp
    salt
  • 1 Tbsp
    shortening or oil
  • 6-6 1/2 c
    all-purpose flour

How To Make perfect white bread

    Soften yeast in warm water. Combine scalded milk with sugar, salt and shortening. Cool to luke warm.

    Stir in 2 cups of flour and beat well. Add the softened yeast and mix.

    Add enough flour to make a moderately stiff dough. It might take more or less of the listed flour, it depends on the humidity on the day you are baking. Knead by hand, or in the a mixer with a dough hook, for 8-10 minutes, until the dough is springy and bounces back when you press your finger into it.

    Place dough in a greased bowl. Cover and let rise in a warm place until doubled in size, about 1 1/2 hours. Punch down and let rise again until double again, about 45 minutes.

    Cut into two portions and shape into loaves by rolling with rolling pin until flat. Roll up, tucking ends under. Place in greased loaf pans and let rise again for about 1 hour.

    During this last rise, preheat the oven to 400 degrees F. Place the risen loaves in oven and bake for 35 minutes.

    After taking the bread from the oven, take out of pans onto cooling rack. Brush butter over the top while it is still warm/hot.

    This dough also can be used for cinnamon rolls that are good.
