My fiance's niece does not like cornbread at all but she loves my sour cream & green onion cornbread. Great to eat with brown beans or chili. It is even delicious by itself.

Ingredients For pat's sour cream & green onion cornbread

  • 2 c
    self-rising corn meal
  • 3/4 c
    milk or buttermilk
  • 1/4 c
    vegetable oil
  • 1
    egg
  • 2 Tbsp
    sugar or favorite artificial sweetner
  • 1 c
    chopped green onion including the green stalk
  • 3/4 c
    favorite sour cream

How To Make pat's sour cream & green onion cornbread

    Preheat a 10 inch cast iron skillet and 1 stick of margarine in a 425 degree oven.

    Blend all ingredients with a wire whisk.

    Pour mixture into preheated skillet and bake for 30 to 35 minutes or until knife inserted in center comes out clean. Invert onto a plate and slice. Serve hot.
