Still on the quest for good, lower carb bread. There is a mix for bread machines, by Bob's Red Mill, that works beautifully. I tried it today and it's really good. Easy, too - and the package has directions for doing it by hand also, in case you don't have a bread machine.

Each slice of the bread has 9 grams carbohydrates, 4 of them are fiber; 1.5 grams fat, and 11 grams protein. 110 calories per slice.

How to Make Bob's Red Mill Low Carb Bread (bread machine)

Step-by-Step

  1. Remove yeast packet from bread mix and set aside. Place water, cream, egg, and oil in the bottom of the bread machine pan.
  2. Carefully put the bread mix on top of the wet ingredients in the pan. Make a well in the center of the flour mix. Put the yeast into the well, being careful not to let the yeast touch the liquid.
  3. Close lid on bread machine and set to process for a basic 2 pound loaf with a medium crust. Start machine. Bread should be done in about 3 hours.
  4. When done, remove pan from machine and allow to cool 5 minutes, then remove loaf from pan to finish cooling. Slice when cool into about 20 slices if you want to match the nutritional information given in the notes.
