I found a few recipes online that I wanted to try, then created my own version!

Ingredients For sweet corn muffins

  • 1 box
    jiffy corn muffin mix
  • 1 lg
    egg
  • 1/3 c
    greek yogurt
  • 3 Tbsp
    honey
  • 3 pkg
    stevia sweetener
  • 1/2 tsp
    vanilla extract
  • 1 Tbsp
    butter, melted
  • splash of milk

How To Make sweet corn muffins

  • 1
    Mix all ingredients together in a bowl.

    Pour into a lined or greased muffin tin.

    Bake in a preheated oven at 400 degrees for 10-15 minutes.

    Serve with honey butter. Enjoy!

    Honey Butter: Mix softened butter and honey (to taste) together then chill in refrigerator.
