Ingredients

  • 2 c
    flour
  • 3/4 c
    sugar
  • 2 tsp
    baking powder
  • 1/2 c
    unsalted butter, melted
  • 3/4 c
    milk
  • 1 large
    egg
  • 1/4 tsp
    vanilla
  • 1 1/2 c
    fresh raspberries
  • 1/4 c
    sugar in the raw

How to Make Raspberry Muffins

Step-by-Step

  1. Heat oven to 400 degrees. Line muffin pan with paper liners.
  2. Combine 1 3/4 cup flour, sugar and baking powder.
  3. Add the melted butter and combine.
  4. In another bowl, whisk together the milk, egg and vanilla.
  5. Add milk mixture to flour mixture.
  6. Toss berries in remaining 1/4 cup of flour.
  7. Gently fold berries into the batter.
  8. Fill muffins 3/4 full.
  9. Sprinkle with raw sugar.
  10. Bake 17 to 20 minutes.
  11. Cool in pan 10 minutes before removing to wire rack.
  12. Enjoy!
