Love to come up with different ingredients for food, especially muffins. I try to stay on the healthy side, not using white flour, but other kinds..there is alot you know. Nuts is a great source of protein and using agave necter instead of sugars..Here is one I make that everyone is crazy about. Give it try and let me know what you think.

Ingredients For nutty muffins

  • 3 c
    spelt flour
  • 1 Tbsp
    baking powder
  • 1 Tbsp
    baking soda
  • 1/4 c
    agave necter or sugar
  • 1 tsp
    sea/kosher salt
  • 2
    eggs, beaten
  • 1/2 c
    chopped pecans
  • 1/2 c
    chopped almonds
  • 1/2 c
    chopped walnuts
  • 1/3 c
    corn oil
  • 1 c
    soy milk or regular milk
  • 1 tsp
    ginger
  • 1 tsp
    allspice
  • 1 tsp
    nutmeg
  • 1 tsp
    cinnamon

How To Make nutty muffins

    Preheat the oven to 350 degrees..Mix all the dry ingredients together, including the spices and set aside Spelt is found in health stores, usually in bulk. Can find in Winco stores and Sprouts

    Add all the other ingredients together, and mix them well. Add this to the dry ingredients and with hands mix it until all the ingredients are incorporated nicely together. it may not take all the milk, so add slowly to see if it is too much, adjust accordingly.

    Place in pam sprayed muffin tins and bake for about 30 minutes or until knife inserted comes out clean. These can be use for any meal, with or without jam/jelly. Enjoy and as always, watch the spices and let me know opinion.
