Ingredients For low cal blueberry muffins

  • 1 c
    all purpose flour
  • 1 c
    white wheat flour
  • 1/2 c
    white sugar
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/4 c
    unsweetened apple sauce
  • 1 c
    skim milk
  • 2 lg
    eggs
  • 2 Tbsp
    lemon juice
  • 1 tsp
    vanilla extract
  • 2 c
    fresh or frozen blueberries

How To Make low cal blueberry muffins

    Preheat oven to 350 degrees. Spray a muffin tin with nonstick cooking spray.

    Sift together flours, sugar, baking powder, baking soda, and salt.

    In a separate bowl combine the apple sauce, lemon juice, eggs, milk and vanilla extract. Add the liquid ingredients to the flour mixture, stirring just until moist.

    Fold in the blueberries.

    Spoon the batter into 12 muffin cups. Bake at 350 degrees for 22 minutes, or until golden.
