These are one of my daughter's favorite muffins, not only to make but eat as a little girl. Now that she is grown and has a family of her own, she loves to make these muffins.

A sweetly tart pick-me-up perfect for brunch, breakfast, or afternoon tea. These lemon muffins are moist and tender. We love that lemonade concentrate is used because it is sweet and gives this fantastic muffin great lemon flavor. Brushing the tops with lemonade just adds to the flavor and sweetness.

Ingredients For lemonade muffins

  • 1 1/2 c
    all-purpose flour
  • 1/4 c
    sugar
  • 2-1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1
    egg, beaten
  • 1 can
    frozen lemonade concentrate, thawed (6 oz)
  • 1/4 c
    milk
  • 1/3 c
    vegetable oil
  • 1/2 c
    walnuts, finely chopped (optional)

How To Make lemonade muffins

  • Whisking dry ingredients in a bowl.

    Preheat oven to 375. Mix dry ingredients.
  • Whisking lemonade, egg, milk, and oil.

    In another bowl, mix 1/2 cup lemonade, egg, milk, and oil.
  • Combining wet and dry ingredients.

    Add the dry ingredients.
  • Batter fully mixed.

    Mix well and stir in optional nuts.
  • Batter poured into muffin tins.

    Prepare muffin pan with vegetable spray or cupcake liners. Fill with batter about 2/3 full. Bake for 15-20 minutes.
  • Brushing hot, baked muffins with lemonade.

    While hot, brush with remaining lemonade.
  • Sprinkling sugar over baked muffins.

    Sprinkle with granulated or powdered sugar.
