Ingredients For eggnog muffins

  • 3 c
    all-purpose flour or unbleached all-purpose flour
  • 1/2 c
    sugar
  • 3 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground nutmeg
  • 1 lg
    egg
  • 1 3/4 c
    eggnog*
  • 1/2 c
    vegetable oil
  • 1/2 c
    golden raisins
  • 1/2 c
    chopped pecans

  • *this recipe was tested with commercially prepared eggnog.

How To Make eggnog muffins

    Preheat oven to 350°F. Grease muffin tin or line with paper-liners.

    In a large bowl, combine the first 5 ingredients.

    In another bowl, combine the egg, eggnog, and oil; stir into dry ingredients, just until moistened. Fold in raisins and pecans.

    Fill prepared muffin tin, 2/3 full. Bake for 20-25 minutes, or until a toothpick comes out clean. Cool, for 5 minutes, before removing from pans to wire racks. Makes 16 muffins.
