These are light and fluffy and can be served for breakfast or anytime during the day. You can serve them plain for a less sugary treat or sweeter with the glaze if you like. I took them to our dog show breakfast every year, and they were gone before any other breakfast item.

Blue Ribbon Recipe

When craving a donut, satisfy the craving by making these donut muffins at home. They are fluffy but have a dense texture, similar to a cake donut. The sweet glaze drizzled on top adds some sweetness. They can be regular-sized or mini muffins. We baked mini-muffins and could not stop popping them in our mouths throughout the day.

Ingredients For donut muffins

  • MUFFINS
  • 3/4 c
    granulated sugar
  • 1 lg
    egg
  • 1/4 c
    oil
  • 3/4 c
    milk
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    all-purpose flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/4 tsp
    nutmeg
  • GLAZE
  • 1 1/2 Tbsp
    butter, melted
  • 1 dash
    salt
  • 2-3 tsp
    milk, as needed
  • 1/2 tsp
    vanilla extract
  • 3/4 c
    confectioners' sugar

How To Make donut muffins

  • Lightly grease a muffin tin.

    Lightly grease a muffin tin with vegetable oil or spray.
  • Beat together sugar and egg.

    In a large bowl, beat together sugar and egg until light in color.
  • Add vegetable oil, milk, and vanilla to the sugar mixture.

  • Combine flour, baking powder, salt, and nutmeg.

    In a separate bowl, combine flour, baking powder, salt, and nutmeg.
  • Pour flour into liquid mixture and mix.

  • Fill muffin tins and bake.

    Fill muffin cups 3/4 full. Bake in a 350-degree preheated oven for 18-20 minutes or until a tester inserted in the middle comes out clean. MINI MUFFINS: Set the timer for 8 minutes less than the recipe calls for which would be about 10-12 minutes. Begin checking the muffins when the timer goes off by sticking a toothpick into the thickest part of the muffin and pulling it out. If the toothpick is clean, then the muffins are done.
  • Mix all ingredients with melted butter for glaze.

    FOR GLAZE: Mix all ingredients with melted butter. Thin as needed with milk.
  • Drizzle glaze over the muffins.

    Drizzle over cooled muffins. Should harden in about 20 minutes.
